“Semolina Rimacinata” di Russello, a local durum wheat that has always been cultivated in the provinces of Syracuse and Ragusa, in the South East of Sicily. In the land not yet planted with vines, I sow the Russello, my grandparents’ wheat, without the use of chemical products.
